*1 tsp. olive oil
*4 onions sliced
*1 extra firm block of tofu (395 g.)
*2-4 Tbsp. vegetable broth
*2 tsp. each dried basil, dried oregano
*1 tsp. each cumin, salt
*1/2 tsp. paprika
*1/4 tsp. turmeric
*1/4 cup nutritional yeast
*2 Tbsp. lemon juice
*2 cups fresh chopped spinach
*1/3 cup soaked sliced sun-dried tomatoes

1. Heat the oil in a large frying pan over medium heat. Add the onions and saute for 3-4 minutes. Crumble tofu into the pan. Cook stirring occasionally until the tofu isn't releasing anymore liquid and starts to brown. This should take about 10 minutes.
2. Meanwhile in a small bowl combine the broth, basil, cumin, oregano, salt, paprika and turmeric. When the tofu has stopped releasing water, add the broth mixture. Cook for about 5 more minutes until all the broth liquid has been absorbed. If it begins to stick, add another Tbsp. of vegetable broth and reduce the heat.
3. Add lemon juice and nutritional yeast. Fold in the spinach and vegetables you have chosen. cook until spinach begins to wilt. Remove from heat, mix and serve warm. you can also drizzle ketchup, or sriracha on your scramble.
