Miniature Apple Pies
Make these in batches ahead of time and freeze. They last for a few months and can be heated in the microwave for 30 seconds and topped with your favorite iced dessert. You will need a muffin tray to make these mini apple pies
2 cups walnuts
5 Tbsp. maple sugar
Dash of salt
2 tsp. cinnamon
3 cups of chopped apples (use your favorite kind)
2 tsp. lemon juice
2 Tbsp. coconut flour
2 Tbsp. coconut sugar
In a food processor, chop the walnuts until they make a fine powder. Add in the maple sugar, salt, vanilla and cinnamon. process until smooth and clumps together. Set aside.
In a large bowl, add lemon juice. Chop and add apples to bowl. The lemon juice will help prevent browning. Once you have added all the chopped apples, add remaining ingredients.
Place 1 1/2 Tbsp. of apple mix to each muffin cup, flatten as much as possible. Add 1 heaping Tbsp. of walnut mixture to top of apples, press evenly. Once you have completed this, place in the freezer. Freeze for at least 2 hours.
HOW TO EAT
Microwave for approximately 30 seconds and top with a scoop of your favorite iced dessert. I used cashew iced cream. MMMmmm!
